Thabdi Peda

Thabdi Peda is a traditional Gujarati sweet. A very popular sweet in Saurashtra region of Gujarat.
which is prepared during the festival and religious events. 
Popularly milk thabdi peda is prepared during Holi, Eid, Diwali, and Navaratri festival, but certainly can be prepared without any occasions and served as dessert.

 Name of the dish: - Thabdi Peda

 ◆ Content: -
 1 liter of milk

 100 grams of sugar

 1 pinch alum

 1/4 teaspoon cardamom powder

 4 tablespoons dry coconut crush to garnish

 ** How to make Thabdi Peda:-

● First, turn on the gas and let the milk boil in the cauldron. When there is a boil, add alum powder and keep stirring.  The milk will slowly break down.  And its water and pulp will be separated.  Still keep stirring well and let it boil.
● Now put half the sugar in another pan on the second gas and keep stirring .. do not add water at all ... let the sugar caramelize .. then turn off the gas.
● Now if the milk is cracked and boiling, keep stirring it so that it becomes mash.  So add half of the remaining sugar and mix well. Let the sugar water burn.
 ● Now pour the caramelized sugar syrup in it. Now shake it well, add cardamom powder in it and when it thickens, turn off the gas and remove it in a dish.  And let cool.
● Thabdi is ready... Now when Thabdi cools down, apply ghee in the palm and make its Peda.  And fill the crushed dry coconut on top.
